My wife is having hip pain. She is scheduled for a hip replacement in a month. So, that makes me chief cook and bottle washer. She is a great cook. She and her X used to own the Tannersville Yacht Club. I have a couple of recipes I've played with over the years, but I am in NO WAY a cook, chef or whatever you want to call it. Now, it's sink or swim! Saturday was easy. Chicken Gorgonzola from Reginatos. So, Sunday, I did a Hot Air Fryer fried chicken with a tweaked BBQ sauce glaze, along with roasted sweet potato with butter and Parmesan cheese and a garden salad, dressed with Bleu Cheese and a Balsamic vinigarette. She liked it! Tonight I put this down in front of her.

I found a small shoulder roast at Adams. I roasted it in the Hot Air Fryer with a Tarragon, Rosemary, Olive Oil marinade. Complimented with roasted Acorn Squash with a maple syrup glaze, and garlic mashed red potatoes. Dressed with a hearty beef gravy. I think she has just added a line item to my resume. I have a sneaking suspicion this hip replacement is going to have a extraordinarily long recovery period! You just may hear me a little less on the radio..... The good news - I'm not going to starve!
